Instructions

  • In a mixing bowl, combine 1 1/2 cups warm water, 1 tablespoon sugar, and 2 teaspoons kosher salt. Sprinkle 1 package of active dry yeast on top. Let it sit for 5 minutes until the mixture begins to foam.
  • Add 4 1/2 cups of all-purpose flour and mix until the dough comes together. Turn the dough out onto a floured surface and knead for about 5 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • In a large pot, bring 4 cups of water and 1/4 cup of baking soda to a boil.
  • Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel. Boil each pretzel in the baking soda water for 30 seconds, then place them on the prepared baking sheet.
  • Brush each pretzel with the beaten egg yolk and water mixture, then sprinkle with coarse salt. Bake for 10-12 minutes, or until golden brown.
