Ingredients

  • 1 1/2 cups warm water
  • 1 packet active dry yeast
  • 4 1/2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 2 teaspoons salt
  • 1/4 cup baking soda
  • 2 cups shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup melted butter
  • 1 tablespoon coarse sea salt

Instructions

  • In a large bowl, dissolve 1 packet of active dry yeast in 1 1/2 cups of warm water. Let it sit for 5 minutes until it becomes frothy.
  • Add 4 1/2 cups of all-purpose flour, 1/4 cup of brown sugar, and 2 teaspoons of salt to the yeast mixture. Mix until a dough forms.
  • Turn the dough out onto a floured surface and knead for 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 30 minutes.
  • Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Divide the dough into 8 equal pieces and roll each piece into a rope. Shape the ropes into pretzels and set them aside.
  • In a large pot, bring 8 cups of water and 1/4 cup of baking soda to a boil. Boil each pretzel for 30 seconds, then place them on the prepared baking sheet.
  • Top each pretzel with 1/4 cup of pizza sauce and 1/4 cup of shredded mozzarella cheese. Sprinkle with grated Parmesan cheese.
  • Bake for 12-15 minutes, or until the pretzels are golden brown and the cheese is bubbly.
  • Brush the baked pretzel pizzas with melted butter and sprinkle with coarse sea salt before serving.

This unique dish has its origins in the United States, where it has gained popularity for its delicious combination of soft pretzel dough and classic pizza toppings. Some chefs have elevated the dish by incorporating gourmet toppings such as artisanal cheeses, cured meats, and fresh herbs. While it can be found in various regions across the US, some of the best versions of pretzel pizza can be savored in artisanal pizzerias in cities like New York and Chicago.
