Instructions

  • In a large mixing bowl, combine 1 1/2 cups warm water, 1 tablespoon granulated sugar, and 2 teaspoons kosher salt. Sprinkle 1 package of active dry yeast on top and let it sit for 5 minutes, until it becomes foamy.
  • Add 4 1/2 cups of all-purpose flour and 1/4 cup melted unsalted butter to the yeast mixture. Mix until the dough comes together.
  • Turn the dough out onto a floured surface and knead for about 5 minutes, until it is smooth and elastic. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, until it doubles in size.
  • Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • Divide the dough into 8 equal pieces. Roll each piece into a long rope, then flatten the rope and place a cheddar cheese stick in the center. Wrap the dough around the cheese, pinching the seams to seal.
  • In a large pot, bring 10 cups of water and 2/3 cup baking soda to a boil. Boil each pretzel dog for 30 seconds, then place them on the prepared baking sheet.
