  • Preheat the oven to 425°F (220°C).
  • Divide the pizza dough into 4 equal portions and roll each portion into a 6-inch circle.
  • Spread 2 tablespoons of marinara sauce on one half of each dough circle, leaving a small border around the edge.
  • Top the sauce with 1/4 cup of mozzarella cheese, a few pepperoni slices, and a sprinkle of Parmesan cheese.
  • Fold the other half of the dough over the filling and press the edges to seal. Crimp the edges with a fork to create a decorative border.
  • In a large pot, bring 8 cups of water to a boil. Carefully add the baking soda to the boiling water (it will bubble up).
  • Boil each calzone for 1 minute, then remove with a slotted spoon and place on a parchment-lined baking sheet.
  • Brush each calzone with the beaten egg and sprinkle with coarse salt.
  • Bake for 15-20 minutes, or until the pretzel crust is golden brown.
  • Allow to cool for a few minutes before serving. Enjoy!
