Potato Sausage Recipe
Created by: Howcan Team
Ingredients
- 4 medium potatoes, peeled and diced
- 1/2 pound of sausage, casings removed
- 1/2 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
- 4 eggs
- 1/4 cup of shredded cheddar cheese
- 2 green onions, chopped (optional, for garnish)
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced potatoes to the skillet and cook for 8-10 minutes, or until they are golden brown and tender. Remove the potatoes from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil and cook the sausage, breaking it up with a spoon, until it is browned and cooked through.
- Add the diced onion, bell pepper, and minced garlic to the skillet with the sausage. Cook for 3-4 minutes, or until the vegetables are softened.
- Stir in the paprika, salt, and black pepper. Add the cooked potatoes back to the skillet and stir to combine everything.
- Make 4 wells in the potato and sausage mixture and crack an egg into each well. Cover the skillet and cook for 4-5 minutes, or until the eggs are cooked to your liking.
- Sprinkle the shredded cheddar cheese over the top of the skillet and let it melt for 1-2 minutes.
- Garnish with chopped green onions, if desired, and serve hot.
The potato sausage recipe has its origins in Sweden, where it is known as "potatis korv." This hearty dish combines potatoes and ground meat, typically pork, with a blend of spices such as nutmeg, allspice, and black pepper. The mixture is then stuffed into sausage casings and cooked to perfection. Renowned chefs like Magnus Nilsson have popularized this traditional Swedish recipe, which is a staple in the Småland region. Today, the best versions of this dish can be found in authentic Swedish restaurants or specialty delis. To make the perfect potato sausage, it's crucial to get the seasoning just right and ensure a balanced ratio of potatoes to meat. For a unique twist, some chefs also incorporate ingredients like onions or garlic for added flavor.
