Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced potatoes to the skillet and cook for 8-10 minutes, or until they are golden brown and tender. Remove the potatoes from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and cook the sausage, breaking it up with a spoon, until it is browned and cooked through.
  • Add the diced onion, bell pepper, and minced garlic to the skillet with the sausage. Cook for 3-4 minutes, or until the vegetables are softened.
  • Stir in the paprika, salt, and black pepper. Add the cooked potatoes back to the skillet and stir to combine everything.
  • Make 4 wells in the potato and sausage mixture and crack an egg into each well. Cover the skillet and cook for 4-5 minutes, or until the eggs are cooked to your liking.
  • Sprinkle the shredded cheddar cheese over the top of the skillet and let it melt for 1-2 minutes.
  • Garnish with chopped green onions, if desired, and serve hot.
