Ingredients
- 2 large potatoes, peeled and grated
- 1 small onion, grated
- 2 tablespoons all-purpose flour
- 1 egg, beaten
- 2 tablespoons fresh chives, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons vegetable oil
Instructions
- Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, combine the grated potatoes, grated onion, flour, beaten egg, chopped chives, salt, and black pepper. Mix well.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the potato mixture into the skillet and flatten with a spatula to form a pancake. Cook for 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining potato mixture, adding more oil to the skillet as needed.
- Transfer the cooked potato pancakes to a paper towel-lined plate to drain any excess oil.
- Serve the chive potato pancakes hot, garnished with additional chopped chives if desired. Enjoy!
