Potato O'Brien is a classic American breakfast dish consisting of diced potatoes, onions, and bell peppers. It originated in the United States and has become a staple in many diners and breakfast joints across the country. The dish is named after a chef named Patrick O'Brien, who is said to have created it in the late 19th century. The key to a perfect Potato O'Brien is achieving the right balance of crispy and tender potatoes, and the flavors of the onions and peppers should complement the dish without overpowering it. Some chefs add a touch of paprika or cayenne for a spicy kick. Today, the best versions of Potato O'Brien can be found in diners and breakfast spots across the United States, particularly in the Midwest and Western regions. It's a beloved dish that continues to be a favorite among breakfast enthusiasts.
