Instructions

  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
  • Add 2 tablespoons of olive oil to the skillet with the bacon grease. Add the diced potatoes, chopped onion, and diced bell pepper to the skillet. Season with paprika, garlic powder, salt, and pepper. Cook over medium heat, stirring occasionally, until the potatoes are golden and crispy, about 20 minutes.
  • Once the potatoes are cooked, stir in the cooked bacon pieces. If desired, crack 4 eggs over the hash and cook until the whites are set but the yolks are still runny.
  • Garnish with fresh parsley, if desired, and serve hot.
