  • In the same skillet, add the diced potatoes and cook for 5 minutes, stirring occasionally. Add the chopped onion and bell pepper, and continue cooking for another 5 minutes until the vegetables are tender.
  • Add the cooked chorizo back to the skillet with the vegetables. Sprinkle with 1 tsp cumin, 1 tsp chili powder, 1/2 tsp salt, and 1/4 tsp black pepper. Stir to combine and cook for an additional 2-3 minutes to let the flavors meld together. Remove from heat.
  • Warm the flour tortillas in a dry skillet or in the microwave for 30 seconds.
