Ingredients
- 1 lb chorizo sausage
- 2 large potatoes, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 tsp cumin

- 8 small flour tortillas
- 1 cup spicy salsa

- 1 lime, cut into wedges
Instructions
- In a large skillet, cook 1 lb of chorizo sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the diced potatoes and cook for 5 minutes, stirring occasionally. Add the chopped onion and bell pepper, and continue cooking for another 5 minutes until the vegetables are tender.
- Add the cooked chorizo back to the skillet with the vegetables. Sprinkle with 1 tsp cumin, 1 tsp chili powder, 1/2 tsp salt, and 1/4 tsp black pepper. Stir to combine and cook for an additional 2-3 minutes to let the flavors meld together. Remove from heat.
- Warm the flour tortillas in a dry skillet or in the microwave for 30 seconds.
- Divide the chorizo and potato mixture among the tortillas. Top each taco with a spoonful of spicy salsa and a sprinkle of chopped cilantro. Serve with lime wedges on the side for squeezing over the tacos.
