Instructions

  • In a large skillet, cook 1 lb of chorizo sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the diced potatoes, chopped onion, and bell pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are crispy and the vegetables are tender.
  • Add the cooked chorizo back to the skillet with the potatoes and vegetables. Sprinkle with 1 tsp cumin, 1 tsp chili powder, 1/2 tsp paprika, and salt and pepper to taste. Stir to combine and cook for an additional 2-3 minutes.
  • Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
  • To assemble the tacos, spoon the chorizo and potato mixture onto each tortilla. Top with shredded cheese, a spoonful of spicy salsa, and a sprinkle of chopped cilantro.
