Ingredients
- 1 lb chorizo sausage
- 2 large potatoes, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 8 small flour tortillas
- 1 cup shredded cheese
- 1 cup spicy salsa
- 1/4 cup chopped cilantro
Instructions
- In a large skillet, cook 1 lb of chorizo sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the diced potatoes, chopped onion, and bell pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are crispy and the vegetables are tender.
- Add the cooked chorizo back to the skillet with the potatoes and vegetables. Sprinkle with 1 tsp cumin, 1 tsp chili powder, 1/2 tsp paprika, and salt and pepper to taste. Stir to combine and cook for an additional 2-3 minutes.
- Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
- To assemble the tacos, spoon the chorizo and potato mixture onto each tortilla. Top with shredded cheese, a spoonful of spicy salsa, and a sprinkle of chopped cilantro.
- Serve the tacos with a side of extra spicy salsa for dipping.
