Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook 6 slices of chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
  • Add 1/2 cup of chopped onion to the skillet with the bacon grease and cook until softened, about 5 minutes.
  • In a small bowl, mix 1 cup of sour cream, 1/2 cup of chicken broth, 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of paprika.
  • In a greased 9x13 inch baking dish, layer half of the sliced potatoes, half of the cooked bacon, half of the sautéed onions, and half of the shredded cheddar cheese. Pour half of the sour cream mixture over the layers.
  • Repeat the layers with the remaining potatoes, bacon, onions, and cheese. Pour the remaining sour cream mixture over the top.
  • Cover the baking dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
  • Sprinkle with 2 tablespoons of chopped fresh parsley before serving. Enjoy!
