Instructions

  • Season the pork chops with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the pork chops to the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the pork chops from the skillet and set aside.
  • In the same skillet, pour in 1/2 cup of chicken broth and scrape up any browned bits from the bottom of the pan.
  • Reduce the heat to medium and stir in 1 cup of heavy cream and 3 tablespoons of Dijon mustard. Simmer for 2-3 minutes, or until the sauce thickens slightly.
  • Return the pork chops to the skillet and spoon the sauce over them. Cook for an additional 2-3 minutes, or until the pork chops are heated through.
  • Sprinkle with 1 tablespoon of chopped fresh parsley before serving. Enjoy!
