Pork belly has a rich history dating back to ancient China, where it was a staple in their cuisine. This succulent cut of meat made its way to Korea, where it became the star ingredient in the beloved dish, "samgyeopsal." In recent years, pork belly has gained popularity in the West, particularly in the realm of modern gastronomy. Renowned chefs like David Chang have elevated the humble pork belly to gourmet status, serving it braised, roasted, or as a crispy, melt-in-your-mouth delicacy. Today, the best versions of this dish can be found in trendy Asian fusion restaurants, where it's often served with pickled vegetables and a drizzle of tangy sauce. Getting the perfect balance of tender meat and crispy skin is crucial, and alternative methods like sous vide cooking have also gained traction for achieving the ideal texture.
