Ingredients
- 1 pound pork tenderloin, cooked and shredded
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (10 ounces) red enchilada sauce
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 corn tortillas
- 2 tablespoons vegetable oil
Instructions
- Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- In a large bowl, mix the shredded pork, black beans, 1/2 cup cheddar cheese, 1/2 cup Monterey Jack cheese, diced onion, minced garlic, cumin, chili powder, salt, and black pepper.
- Warm the tortillas in the microwave for 1 minute to make them pliable.
