Ingredients
- 1 lb mahi mahi fillets, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1 egg
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 pineapple slices
- 4 hamburger buns
- Lettuce and tomato for garnish
Instructions
- In a food processor, pulse the mahi mahi fillets until finely chopped.
- In a large bowl, combine the chopped mahi mahi, breadcrumbs, cilantro, red onion, egg, garlic powder, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into 4 patties and refrigerate for 10 minutes to firm up.
- Preheat a grill or grill pan over medium-high heat. Grill the mahi mahi patties for 4-5 minutes on each side, or until cooked through.
- While the patties are grilling, grill the pineapple slices for 2-3 minutes on each side, until grill marks appear.
- Toast the hamburger buns on the grill for 1-2 minutes.
- Assemble the burgers by placing a mahi mahi patty on each bun, topping with a grilled pineapple slice, lettuce, and tomato.
