Instructions

  • In a large bowl, combine the chopped mahi mahi, breadcrumbs, cilantro, red onion, egg, garlic powder, paprika, salt, and pepper. Mix until well combined.
  • Form the mixture into 4 patties and refrigerate for 10 minutes to firm up.
  • Preheat a grill or grill pan over medium-high heat. Grill the mahi mahi patties for 4-5 minutes on each side, or until cooked through.
  • While the patties are grilling, grill the pineapple slices for 2-3 minutes on each side, until grill marks appear.
  • Toast the hamburger buns on the grill for 1-2 minutes.
  • Assemble the burgers by placing a mahi mahi patty on each bun, topping with a grilled pineapple slice, lettuce, and tomato.
