Instructions

  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the diced tofu and cook until golden brown, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  • Add the chilled jasmine rice and stir-fry for 2-3 minutes.
  • Stir in the turmeric powder for color and flavor.
  • Add the pineapple chunks, frozen peas and carrots, and cooked tofu to the skillet. Stir to combine.
  • Pour in the soy sauce and sesame oil, and continue to stir-fry for another 2-3 minutes.
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions before serving.
