Ingredients
- 2 cups cooked jasmine rice, chilled
- 1 cup firm tofu, diced
- 1 cup pineapple chunks
- 1/2 cup frozen peas and carrots
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1/4 teaspoon turmeric powder
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the diced tofu and cook until golden brown, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
- Add the chilled jasmine rice and stir-fry for 2-3 minutes.
- Stir in the turmeric powder for color and flavor.
- Add the pineapple chunks, frozen peas and carrots, and cooked tofu to the skillet. Stir to combine.
- Pour in the soy sauce and sesame oil, and continue to stir-fry for another 2-3 minutes.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
