- 2 cups cooked white rice
- 1 cup diced pineapple
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup frozen peas
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add minced garlic and cook for 1 minute until fragrant.
- Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the garlic.
- Add diced carrots, bell peppers, and frozen peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Add cooked white rice to the skillet and stir to combine with the vegetables.
- Pour in soy sauce and sesame oil, then add diced pineapple and chopped green onions. Stir-fry for another 2-3 minutes until everything is heated through.
- Season with salt and pepper to taste, and adjust the seasoning if needed.
