  • 1 red bell pepper, sliced
  • 1 cup pineapple chunks
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 2 green onions, sliced
  • Cooked rice, for serving

Instructions

  • Heat the sesame oil and vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the bell pepper, pineapple, garlic, ginger, and red pepper flakes. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  • Return the chicken to the skillet and pour the soy sauce mixture over the chicken and vegetables. Cook for an additional 2-3 minutes, stirring constantly, until the sauce has thickened and everything is heated through.
  • Sprinkle with green onions and serve over cooked rice. Enjoy!
