Ingredients
- 1 1/2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup pineapple juice
- 1/4 cup ketchup
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 cup pineapple chunks, drained
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked white rice, for serving
- Sesame seeds and chopped green onions for garnish
Instructions
- In a bowl, whisk together 1/2 cup soy sauce, 1/4 cup brown sugar, 1/4 cup pineapple juice, 1/4 cup ketchup, 2 tablespoons rice vinegar, minced garlic, and grated ginger.
- Add the chicken pieces to the marinade and let it sit for at least 10 minutes.
- In a small bowl, mix 1 tablespoon of cornstarch with 1/4 cup of water to create a slurry. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Pour the pineapple chunks into the skillet and stir to combine with the chicken.
- Pour the cornstarch slurry into the skillet and stir well. Cook for an additional 2-3 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Serve the extra pineapple chicken over cooked white rice and garnish with sesame seeds and chopped green onions.
