Instructions

  • In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt.
  • Add 1 large egg and 1/2 cup of sour cream to the flour mixture. Mix until a dough forms.
  • Knead the dough on a floured surface until smooth, then cover and let rest for 30 minutes.
  • While the dough is resting, boil the diced potatoes until tender. Drain and mash the potatoes in a bowl.
  • In a skillet, sauté 1/2 cup of diced onion until translucent. Add the sautéed onions to the mashed potatoes along with 1 cup of shredded cheddar cheese. Season with salt and pepper to taste.
  • Roll out the dough on a floured surface and cut into circles using a cookie cutter or a glass.
  • Place a spoonful of the potato and cheese filling onto each dough circle. Fold the dough over the filling and pinch the edges to seal.
  • Bring a large pot of salted water to a boil. Cook the pierogi in batches for 3-5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
  • In a skillet, melt 2 tablespoons of butter and sauté the cooked pierogi until lightly browned.
