Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup sour cream
- 2 medium potatoes, peeled and diced
- 1/2 cup diced onion
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tablespoons butter
- 1/4 cup chopped bacon (optional)
- 1/4 cup chopped green onions (optional)
Instructions
- In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt.
- Add 1 large egg and 1/2 cup of sour cream to the flour mixture. Mix until a dough forms.
- Knead the dough on a floured surface until smooth, then cover and let rest for 30 minutes.
- While the dough is resting, boil the diced potatoes until tender. Drain and mash the potatoes in a bowl.
- In a skillet, sauté 1/2 cup of diced onion until translucent. Add the sautéed onions to the mashed potatoes along with 1 cup of shredded cheddar cheese. Season with salt and pepper to taste.
- Roll out the dough on a floured surface and cut into circles using a cookie cutter or a glass.
- Place a spoonful of the potato and cheese filling onto each dough circle. Fold the dough over the filling and pinch the edges to seal.
- Bring a large pot of salted water to a boil. Cook the pierogi in batches for 3-5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
- In a skillet, melt 2 tablespoons of butter and sauté the cooked pierogi until lightly browned.
- Optional: Top the pierogi with chopped bacon and green onions before serving.
