Instructions

  • In a large bowl, mix together 2 cups of flour and 1/2 teaspoon of salt.
  • In a separate bowl, whisk 1 large egg, then add 1/2 cup of sour cream and 1/4 cup of softened butter. Mix until well combined.
  • Gradually add the wet ingredients to the flour mixture, stirring until a dough forms. Knead the dough on a floured surface until smooth, then cover and let it rest for 30 minutes.
  • In a separate bowl, combine 2 cups of mashed potatoes, 1 cup of shredded cheddar cheese, 1/2 cup of diced onion, and salt and pepper to taste.
  • Roll out the dough on a floured surface and cut into circles using a cookie cutter or a glass. Place a spoonful of the potato filling in the center of each circle, then fold the dough over and press the edges to seal.
  • Bring a large pot of salted water to a boil. Cook the pierogi in batches for 3-5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the boiled pierogi and fry until golden brown on both sides.
  • Serve hot with sour cream or your favorite dipping sauce. Enjoy!
