Ingredients
- 1 pound pickled herring fillets
- 4 cups mixed greens
- 1/2 red onion, thinly sliced
- 1/4 cup apple cider vinegar
- 2 tablespoons sugar
- 1/4 cup water
- 1 teaspoon whole peppercorns
- 1 teaspoon mustard seeds
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a small saucepan, combine 1/4 cup apple cider vinegar, 2 tablespoons sugar, 1/4 cup water, 1 teaspoon whole peppercorns, 1 teaspoon mustard seeds, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat and let the pickling liquid cool to room temperature.
- Once the pickling liquid is cooled, place 1 pound of pickled herring fillets in a shallow dish and pour the pickling liquid over the herring. Cover and refrigerate for at least 2 hours to allow the herring to marinate.
- When ready to serve, divide 4 cups of mixed greens among 4 plates. Top the mixed greens with thinly sliced red onion.
- Remove the pickled herring from the refrigerator and place a few pieces on top of the mixed greens on each plate.
- Drizzle 2 tablespoons of olive oil over the pickled herring and mixed greens.
- Serve immediately and enjoy the tangy and flavorful pickled herring on a bed of mixed greens.
