Instructions

  • Cook the penne pasta according to the package instructions. Drain and set aside.
  • Preheat the grill to medium-high heat.
  • In a small bowl, mix together 1/4 cup of basil pesto and 1/4 cup of grated Parmesan cheese. Set aside.
  • Season the chicken breasts with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
  • Brush the chicken breasts with 2 tablespoons of olive oil.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked and grill marks appear. Remove from the grill and let it rest for 5 minutes.
  • Slice the grilled chicken into strips.
  • In a large mixing bowl, toss the cooked penne pasta with the remaining 1/4 cup of basil pesto and Parmesan cheese mixture.
  • Divide the pesto pasta among serving plates and top with the grilled chicken strips.
