Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together 1 cup of basil pesto, 1/2 cup of breadcrumbs, and 1/4 cup of grated Parmesan cheese.
  • Season 4 boneless, skinless chicken breasts with salt and pepper to taste.
  • Coat each chicken breast with the pesto mixture, pressing it onto the chicken to form a crust.
  • Place the coated chicken breasts on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the crust is golden brown.
  • While the chicken is baking, prepare the balsamic glaze by combining 1/4 cup of balsamic vinegar and 2 tablespoons of honey in a small saucepan over medium heat.
