Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of basil pesto
- 1/2 cup of grated Parmesan cheese
- 1 cup of quinoa
- 2 cups of chicken broth
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix 1 cup of basil pesto with 1/2 cup of grated Parmesan cheese.
- Season the chicken breasts with salt and pepper, then spread the pesto mixture evenly over the top of each chicken breast.
- Place the pesto crusted chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the chicken is cooked through and the crust is golden brown.
