Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of basil pesto
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of breadcrumbs
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow dish, mix together 1 cup of basil pesto, 1/2 cup of grated Parmesan cheese, and 1/2 cup of breadcrumbs.
- Season 4 boneless, skinless chicken breasts with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
- Coat each chicken breast with the pesto mixture, pressing down to adhere the crust to the chicken.
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 3-4 minutes on each side, until the crust is golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving.
