  • Place two slices of bread, oiled side down, on a clean surface.
  • Spread 2 tablespoons of pesto on each slice of bread.
  • Divide the sliced grilled chicken evenly on top of the pesto on each slice.
  • Sprinkle 1/4 cup of shredded mozzarella cheese on top of the chicken on each slice.
  • Top with the remaining slices of bread, oiled side up.
  • Place the sandwiches on the preheated panini press or grill pan and cook for 3-4 minutes, or until the bread is golden brown and the cheese is melted.
  • Carefully remove the panini from the press or pan, slice in half, and serve hot.
