Instructions
- Preheat the oven to 375 degrees F.
- Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for the stuffing.
- Season the inside of each chicken breast with salt and pepper.
- Spread 2 tablespoons of pesto inside each chicken breast, then add 1 ounce of goat cheese to each breast.
- Carefully wrap 2 slices of prosciutto around each chicken breast, securing the filling inside.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the stuffed chicken breasts to the skillet and cook for 3-4 minutes on each side, until the prosciutto is crispy and the chicken is golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees F.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
