Instructions

  • Preheat the oven to 375 degrees F.
  • Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for the stuffing.
  • Season the inside of each pocket with salt and pepper.
  • Stuff each chicken breast with 2 tablespoons of pesto and 1 oz of goat cheese, pressing the edges to seal the pocket.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Sear the stuffed chicken breasts for 3-4 minutes on each side, until golden brown.
  • Transfer the chicken to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165 degrees F.
  • Let the chicken rest for 5 minutes before serving. Enjoy!
