Ingredients
- 2 pounds of large shrimp, deveined and shell-on
- 1/4 cup of unsalted butter
- 4 cloves of garlic, minced
- 1 tablespoon of fresh lemon juice
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of chopped fresh parsley
Instructions
- In a large pot, bring water to a boil and add 1 tablespoon of salt.
- Add the shrimp to the boiling water and cook for 2-3 minutes, or until they turn pink and opaque. Do not overcook.
- Drain the shrimp and transfer to a large bowl of ice water to stop the cooking process. Once cooled, drain and set aside.
- In a small saucepan, melt 1/4 cup of unsalted butter over medium heat.
- Add 4 cloves of minced garlic to the melted butter and cook for 1-2 minutes, or until fragrant.
- Stir in 1 tablespoon of fresh lemon juice, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for an additional 1-2 minutes.
- Remove the garlic butter sauce from the heat and stir in 1 tablespoon of chopped fresh parsley.
- Serve the peel and eat shrimp with the garlic butter dipping sauce on the side for dipping.
