  • 1 teaspoon baking soda

Instructions

  • Prepare a baking sheet by lining it with parchment paper or greasing it with butter.
  • In a heavy-bottomed saucepan, combine 1 cup of sugar, 1/2 cup of light corn syrup, 1/4 cup of water, and 1/8 teaspoon of salt.
  • Cook over medium heat, stirring constantly, until the sugar has dissolved.
  • Once the sugar has dissolved, stir in 1 cup of raw peanuts.
  • Continue to cook the mixture, stirring frequently, until it reaches 300°F on a candy thermometer (hard crack stage).
  • Remove the saucepan from the heat and quickly stir in 1 tablespoon of unsalted butter, 1 teaspoon of vanilla extract, and 1 teaspoon of baking soda. The mixture will bubble up, so be careful.
  • Immediately pour the hot mixture onto the prepared baking sheet, spreading it out with a spatula into an even layer.
  • Allow the peanut brittle to cool and harden at room temperature for about 30 minutes.
  • Once completely cooled and hardened, break the peanut brittle into pieces and store in an airtight container.
