Ingredients
- 2 cups all-purpose flour

- 2 large eggs

- 2 cups diced peaches

Instructions
- In a large bowl, whisk together 2 cups of flour, 1/4 cup sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, and 1/2 teaspoon ground cinnamon.
- In a separate bowl, beat 2 large eggs, then stir in 1/2 cup milk and 1 teaspoon vanilla extract.
- Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Gently fold in 2 cups of diced peaches.
- In a large, heavy-bottomed pot, heat 2 inches of vegetable oil to 375°F (190°C).
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- Dust the peach fritters with powdered sugar before serving.
