Peach Almond Galette with Vanilla Ice Cream

Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup almond flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup ice water
- 4 ripe peaches, pitted and sliced
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon almond extract
- 1 tablespoon lemon juice
- 1 egg, beaten
- 6 scoops of vanilla ice cream
Instructions
- In a large bowl, combine 1 1/2 cups of all-purpose flour, 1/4 cup of almond flour, 1/4 cup of granulated sugar, and 1/2 teaspoon of salt.
- Add the cold, diced butter to the flour mixture and use a pastry cutter or your hands to work the butter into the flour until it resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sliced peaches with 1/4 cup of brown sugar, 1 teaspoon of ground cinnamon, 1/4 teaspoon of almond extract, and 1 tablespoon of lemon juice. Set aside.
- On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
- Arrange the peach slices in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the peaches, pleating as needed.
- Brush the edges of the dough with the beaten egg. Sprinkle the edges with a little extra sugar if desired.
- Bake the galette for 30-35 minutes, or until the crust is golden brown and the peaches are tender.
- Remove the galette from the oven and let it cool for 10 minutes before serving.
