  • 1/4 cup almond flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/4 cup ice water
  • 4 ripe peaches, pitted and sliced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1 egg, beaten
  • 6 scoops of vanilla ice cream

Instructions

  • In a large bowl, combine 1 1/2 cups of all-purpose flour, 1/4 cup of almond flour, 1/4 cup of granulated sugar, and 1/2 teaspoon of salt.
  • Add the cold, diced butter to the flour mixture and use a pastry cutter or your hands to work the butter into the flour until it resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss the sliced peaches with 1/4 cup of brown sugar, 1 teaspoon of ground cinnamon, 1/4 teaspoon of almond extract, and 1 tablespoon of lemon juice. Set aside.
  • On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
  • Arrange the peach slices in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the peaches, pleating as needed.
