Instructions

  • Fry the plantain slices in the hot oil until golden brown, about 3 minutes per side. Remove from the oil and drain on paper towels.
  • Using a flat-bottomed glass or a plantain press, flatten the fried plantain slices to about 1/4 inch thick.
  • Return the flattened plantains to the hot oil and fry for an additional 2 minutes per side, until crispy and golden brown. Remove from the oil and drain on paper towels. Season with salt.
  • In a medium bowl, mash the ripe avocados with a fork until smooth.
