Grilled Chicken Pasta Primavera

Ingredients
- 8 oz of penne pasta
- 2 boneless, skinless chicken breasts
- 1 cup of cherry tomatoes, halved
- 1 cup of broccoli florets
- 1/2 cup of sliced bell peppers
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1/4 cup of chicken broth
- 1/4 cup of heavy cream
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt and pepper, then grill for 6-7 minutes on each side until fully cooked. Set aside to rest for 5 minutes, then slice into strips.
- In a large pot, bring water to a boil and cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the cherry tomatoes, broccoli, and bell peppers to the skillet. Cook for 3-4 minutes until the vegetables are slightly tender.
- Pour in the chicken broth and heavy cream, then bring to a simmer. Let it cook for 2-3 minutes until the sauce thickens slightly.
- Add the cooked penne pasta and grilled chicken strips to the skillet. Toss everything together until well combined and heated through.
- Sprinkle grated Parmesan cheese over the pasta and toss again to melt the cheese and coat the pasta evenly.
- Season with salt and pepper to taste.
- Garnish with fresh basil leaves before serving.
