Pancetta, a type of Italian bacon, has a rich history dating back to ancient Rome. It is traditionally made by seasoning pork belly with salt and spices, then curing it for several months. When crumbled over a Caesar salad, it adds a savory, salty flavor that complements the crisp romaine lettuce and tangy dressing. Renowned chefs like Mario Batali and Lidia Bastianich have popularized the use of pancetta in modern Italian cuisine. In Italy, the best version of this dish can be found in the regions of Emilia-Romagna and Tuscany, where local pancetta is used to elevate classic Caesar salads. The key to a perfect pancetta Caesar salad lies in using high-quality, thinly sliced pancetta and a well-balanced dressing. Alternatively, some chefs opt for grilling the pancetta to add a smoky flavor to the salad.
