Instructions

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
  • Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat with the remaining batter.
  • While the pancakes are cooking, preheat the oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  • Arrange the bacon slices on the wire rack and bake for 15-20 minutes, or until crispy.
  • Serve the pancakes with the crispy bacon on the side and enjoy!
