Ingredients
- 1 pound of sea scallops
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
- 4 tablespoons of unsalted butter
- 2 cloves of garlic, minced
- 1 tablespoon of fresh parsley, chopped
- 1 tablespoon of fresh chives, chopped
- 1 tablespoon of fresh lemon juice
Instructions
- Pat the scallops dry with paper towels and season both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- Add the scallops to the skillet and cook for 2-3 minutes on each side until golden brown and opaque. Remove from the skillet and set aside.
- In the same skillet, melt 4 tablespoons of unsalted butter over medium heat. Add 2 cloves of minced garlic and cook for 1 minute until fragrant.
- Stir in 1 tablespoon each of chopped fresh parsley and chives, and cook for an additional 1-2 minutes.
- Return the scallops to the skillet and drizzle with 1 tablespoon of fresh lemon juice. Cook for 1 minute, spooning the herb butter sauce over the scallops.
- Remove from heat and serve the scallops immediately, spooning the herb butter sauce over the top. Enjoy!
