  • Remove the bison tenderloin steaks from the refrigerator and let them sit at room temperature for 30 minutes.
  • Season both sides of the bison tenderloin steaks with 2 tsp of salt and 1 tsp of black pepper.
  • Heat 2 tbsp of olive oil in a large skillet over medium-high heat.
  • Add the bison tenderloin steaks to the skillet and sear for 3-4 minutes on each side for medium-rare, or longer to reach desired doneness.
  • During the last minute of cooking, add the minced garlic and rosemary sprigs to the skillet and baste the steaks with the infused oil.
  • Remove the bison tenderloin steaks from the skillet and let them rest for 5 minutes before serving.
