Ingredients
- 4 cod fillets (6 ounces each)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh dill
- 1 teaspoon chopped fresh chives
Instructions
- In a small bowl, mix together 1/2 cup mayonnaise, 2 cloves minced garlic, 1 tablespoon fresh lemon juice, 1 tablespoon chopped fresh parsley, 1 teaspoon chopped fresh dill, and 1 teaspoon chopped fresh chives to make the herbed aioli. Set aside.
- Season the 4 cod fillets with salt and pepper to taste.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the seasoned cod fillets to the skillet and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork.
- Remove the cod from the skillet and transfer to a serving platter.
- Serve the pan-roasted cod with the prepared herbed aioli on the side.
