Instructions

  • Soak the rice noodles in hot water for 8-10 minutes until they are soft but still slightly firm. Drain and set aside.
  • In a small bowl, mix together the soy sauce, oyster sauce, dark soy sauce, brown sugar, and chicken or vegetable broth. Set aside.
  • Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir-fry for 30 seconds.
  • Add the chicken, beef, or tofu to the wok and stir-fry until cooked through. Push the meat to one side of the wok.
  • Crack the eggs into the wok and scramble them until they are cooked. Mix the eggs with the meat.
  • Add the Chinese broccoli or regular broccoli to the wok and stir-fry for 2-3 minutes until it is tender-crisp.
  • Add the drained rice noodles to the wok and pour the sauce mixture over the top. Use tongs to gently toss everything together until the noodles are evenly coated with the sauce.
  • Sprinkle the white pepper over the noodles and continue to stir-fry for 2-3 minutes until everything is heated through.
  • Transfer the Pad See Ew to serving plates and enjoy!
