Ingredients
- 1 lb pork tenderloin, thinly sliced
- 2 cups green beans, trimmed and cut into 2-inch pieces
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1/2 cup coconut milk
- 2 tbsp vegetable oil
- 4-5 kaffir lime leaves, thinly sliced (optional)
- 1/4 cup Thai basil leaves (optional)
Instructions
- In a small bowl, mix together 2 tbsp red curry paste, 1 tbsp fish sauce, 1 tbsp soy sauce, and 1 tbsp sugar. Set aside.
- Heat 2 tbsp of vegetable oil in a wok or large skillet over medium-high heat.
- Add the thinly sliced pork tenderloin and stir-fry for 3-4 minutes until browned and cooked through.
- Add the green beans to the wok and continue stir-frying for another 2-3 minutes until they are tender-crisp.
- Pour in the red curry paste mixture and stir to coat the pork and green beans evenly.
- Add 1/2 cup of coconut milk to the wok and stir to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- If using, add the thinly sliced kaffir lime leaves and Thai basil leaves to the wok and stir to incorporate.
- Remove from heat and transfer the Pad Prik King to a serving dish.
- Serve hot with steamed jasmine rice. Enjoy!
