Instructions

  • In a small bowl, mix together 2 tbsp red curry paste, 1 tbsp fish sauce, 1 tbsp soy sauce, and 1 tbsp sugar. Set aside.
  • Heat 2 tbsp of vegetable oil in a wok or large skillet over medium-high heat.
  • Add the thinly sliced pork tenderloin and stir-fry for 3-4 minutes until browned and cooked through.
  • Add the green beans to the wok and continue stir-frying for another 2-3 minutes until they are tender-crisp.
  • Pour in the red curry paste mixture and stir to coat the pork and green beans evenly.
  • Add 1/2 cup of coconut milk to the wok and stir to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  • If using, add the thinly sliced kaffir lime leaves and Thai basil leaves to the wok and stir to incorporate.
  • Remove from heat and transfer the Pad Prik King to a serving dish.
  • Serve hot with steamed jasmine rice. Enjoy!
