  • 2 tablespoons olive oil

  • 1 bunch broccoli rabe, trimmed and chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the garlic and red pepper flakes, and cook for 1 minute until fragrant.
  • Add the chopped broccoli rabe to the skillet and sauté for 5-7 minutes, or until tender.
  • Return the cooked sausage to the skillet with the broccoli rabe and stir to combine. Season with salt and pepper to taste.
  • Add the cooked orecchiette to the skillet and toss everything together until well combined.
  • Sprinkle the grated Parmesan cheese over the pasta and toss again to coat.
  • Serve the orecchiette with sausage and broccoli rabe hot, and enjoy!
