Spicy Sausage Orecchiette

Ingredients
- 12 oz orecchiette pasta
- 1 lb spicy Italian sausage, casings removed
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh basil
- Salt and pepper to taste
- Crushed red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil. Add 12 oz of orecchiette pasta and cook according to package instructions. Drain and set aside.
- In a large skillet, cook 1 lb of spicy Italian sausage over medium heat, breaking it up with a spoon, until browned and cooked through. Remove the sausage from the skillet and set aside.
- In the same skillet, add 1/2 cup of diced onion and cook until softened, about 3 minutes. Add 3 cloves of minced garlic and cook for an additional 1 minute.
- Stir in 1 can of diced tomatoes and 1/2 cup of chicken broth. Bring to a simmer and let cook for 5 minutes.
- Reduce the heat to low and stir in 1/4 cup of heavy cream, 1/4 cup of grated Parmesan cheese, and 2 tbsp of chopped fresh basil. Season with salt and pepper to taste.
- Add the cooked orecchiette pasta and the cooked spicy Italian sausage to the skillet. Toss everything together until well combined and heated through.
- Serve the spicy sausage orecchiette in bowls, garnished with additional Parmesan cheese and crushed red pepper flakes if desired. Enjoy!
