Italian

Orecchiette, a traditional pasta from Puglia, Italy, has a rich history dating back to the 12th century. The name "orecchiette" translates to "little ears," a nod to the pasta's unique shape. When paired with spicy sausage, this dish takes on a bold and flavorful profile that has become a favorite in Italian cuisine. Chefs in the Puglia region are known for their expertise in crafting this dish, using locally sourced spicy sausage to infuse the pasta with a fiery kick. Today, the best versions of this dish can be found in authentic Italian trattorias, where the key lies in using high-quality spicy sausage and mastering the art of al dente orecchiette. For a unique twist, some chefs also incorporate broccoli rabe to add a hint of bitterness that balances the heat of the sausage. Whether enjoyed in Puglia or at a renowned Italian restaurant, orecchiette with spicy sausage is a dish that captures the essence of Italian culinary tradition.
