Orange Chicken Stir-Fry

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons cornstarch
- 1/4 cup soy sauce
- 1/4 cup orange juice
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon grated fresh ginger
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 2 green onions, sliced
- Cooked white rice, for serving
Instructions
- In a bowl, toss 2 tablespoons of cornstarch with the bite-sized chicken pieces until well coated.
- In a separate bowl, whisk together 1/4 cup of soy sauce, 1/4 cup of orange juice, 2 tablespoons of rice vinegar, 2 tablespoons of brown sugar, 1 tablespoon of sesame oil, grated fresh ginger, minced garlic, and red pepper flakes.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and cook until golden and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced red and green bell peppers, and broccoli florets. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet and pour the orange sauce over the chicken and vegetables. Stir well to coat everything in the sauce and cook for an additional 2-3 minutes until the sauce thickens.
- Serve the orange chicken stir-fry over cooked white rice and garnish with sliced green onions. Enjoy!
