Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 cup buttermilk
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup raisins
Instructions
- Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, combine 1 1/2 cups of flour, 1 cup of rolled oats, 1/2 cup of brown sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1 teaspoon of ground cinnamon.
- In a separate bowl, whisk together 1/2 cup of unsweetened applesauce, 1/4 cup of vegetable oil, 1 cup of buttermilk, 1 egg, and 1 teaspoon of vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in 3/4 cup of raisins.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
