Instructions

  • Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
  • In a large bowl, combine 1 1/2 cups of flour, 1 cup of rolled oats, 1/2 cup of brown sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1 teaspoon of ground cinnamon.
  • In a separate bowl, whisk together 1/2 cup of unsweetened applesauce, 1/4 cup of vegetable oil, 1 cup of buttermilk, 1 egg, and 1 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in 3/4 cup of raisins.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
