Oatmeal Raisin Granola Bars

Ingredients
- 2 cups of old-fashioned oats
- 1/2 cup of all-purpose flour
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1/2 cup of unsalted butter, melted
- 1/2 cup of honey
- 1 teaspoon of vanilla extract
- 1/2 cup of raisins
Instructions
- Preheat the oven to 350 degrees F. Grease and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, mix together 2 cups of old-fashioned oats, 1/2 cup of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
- Add in 1/2 cup of melted unsalted butter, 1/2 cup of honey, and 1 teaspoon of vanilla extract. Stir until well combined.
- Fold in 1/2 cup of raisins until evenly distributed in the mixture.
- Press the mixture firmly and evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Allow the granola bars to cool completely in the pan on a wire rack.
- Once cooled, use the parchment paper overhang to lift the bars out of the pan and transfer to a cutting board.
- Cut into 12 bars and store in an airtight container for up to a week.
