Instructions

  • Preheat the oven to 350 degrees F. Grease and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • In a large bowl, mix together 2 cups of old-fashioned oats, 1/2 cup of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
  • Add in 1/2 cup of melted unsalted butter, 1/2 cup of honey, and 1 teaspoon of vanilla extract. Stir until well combined.
  • Fold in 1/2 cup of raisins until evenly distributed in the mixture.
  • Press the mixture firmly and evenly into the prepared baking pan.
  • Bake for 20-25 minutes, or until the edges are golden brown.
  • Allow the granola bars to cool completely in the pan on a wire rack.
  • Once cooled, use the parchment paper overhang to lift the bars out of the pan and transfer to a cutting board.
  • Cut into 12 bars and store in an airtight container for up to a week.
