Ingredients
- 2 cups of oat flour
- 2 tablespoons of sugar
- 2 teaspoons of baking powder

- 2 eggs

- 2 tablespoons of melted butter
Instructions
- In a large bowl, whisk together 2 cups of oat flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1 teaspoon of ground cinnamon.
- In a separate bowl, beat 2 eggs and then stir in 1 1/2 cups of milk and 2 tablespoons of melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter may be slightly lumpy.
- Preheat a non-stick griddle or skillet over medium heat. Lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
- Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while cooking the remaining batter.
