  • 1 head of lettuce, torn into bite-sized pieces
  • 1/2 pound of green beans, trimmed
  • 4 small red potatoes, boiled and quartered
  • 4 eggs, hard-boiled and halved

  • 1 can of tuna, drained
  • 2 tablespoons of capers
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of Dijon mustard
  • 1 clove of garlic, minced
  • Salt and pepper to taste

  • In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of Dijon mustard, and the minced garlic to make the vinaigrette. Season with salt and pepper to taste.
  • Arrange the torn lettuce on a large serving platter. Top with the blanched green beans, boiled potatoes, hard-boiled eggs, cherry tomatoes, black olives, tuna, capers, and red onion.
