Nicoise Salad

Ingredients
- 1 head of lettuce, torn into bite-sized pieces
- 1/2 pound of green beans, trimmed
- 4 small red potatoes, boiled and quartered
- 4 eggs, hard-boiled and halved
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of black olives
- 1 can of tuna, drained
- 2 tablespoons of capers
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of Dijon mustard
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions
- In a pot of boiling water, blanch the green beans for 2 minutes, then transfer to a bowl of ice water to stop the cooking process. Drain and set aside.
- In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of Dijon mustard, and the minced garlic to make the vinaigrette. Season with salt and pepper to taste.
- Arrange the torn lettuce on a large serving platter. Top with the blanched green beans, boiled potatoes, hard-boiled eggs, cherry tomatoes, black olives, tuna, capers, and red onion.
- Drizzle the vinaigrette over the salad and gently toss to combine all the ingredients.
- Serve immediately and enjoy!
