Nacho Cheese Casserole

Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies, drained
- 1 can (4 ounces) diced green chilies
- 1 jar (16 ounces) salsa
- 1 bag (10 ounces) tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup nacho cheese sauce
- 1/4 cup chopped fresh cilantro
- Sour cream, for serving
- Sliced jalapenos, for serving
Instructions
- Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of ground beef and diced onion over medium heat until the beef is no longer pink. Drain any excess fat.
- Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, diced green chilies, and salsa. Cook for 5 minutes, stirring occasionally.
- Spread half of the tortilla chips in the bottom of the prepared baking dish. Top with half of the beef mixture, followed by half of the shredded cheddar cheese and half of the nacho cheese sauce. Repeat layers with the remaining ingredients.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream and sliced jalapenos.
